Afternoon Nigella.


Apologies for the really rubbish Sunday post, I'd been so sidetracked on placement I hadn't thought of anything to blog about. Soooo to make amends, today I have been busy being a domestic goddess; buying groceries, washing bedding and baking some goodies. I am going to share with you how to make some absolutely B-E-A-UTIFUL muffins that should definitely make your placement treat list. They are especially perfect for people who always buy bananas but only like to eat them in the green stage, I always have some sad looking brown ones left from the bunch. 


Banana and Nutella Swirl Muffins

What you will need:
  • 230g  or 1 3/4 cups of self raising flour
  • 150g or 3/4 cup of granulated white sugar
  • 1/2 teaspoon of salt
  • 2 large eggs
  • 113g or 1/2 cup of melted butter/margarine
  • 3 large very ripe bananas mashed
  • 1 teaspoon vanilla extract
  • 4 tablespoon Nutella (microwaved for 1 minute so runny)


Pre-heat your oven to 180C or 350F. Prepare your muffin tin or get yourself a fancy silicone one like me :) they just pop out and there's no need to keep buying paper cases! Eco friendly ;)


In one bowl mix your dry ingredients; flour, sugar & salt. In another bowl, thoroughly mix your eggs, butter, mashed bananas & vanilla. This should look pretty darn gross when you are done.


Gradually tip your wet ingredients into the dry ingredients, gently folding the mixture together. You want all your ingredients to be mixed properly but still lumpy so you get the muffiny texture.



Divide your mixture :) I managed to make 10 quite large muffins from the mix.


Spoon your nutella into a small microwaveable dish and heat for 2 minutes. This allows it to go all runny. Spoon a decent blob onto the top of each muffin and then use a cocktail stick to spiral the Nutella through the muffin mixture.


Bake for 20-25 minutes until they have risen slightly and look crispy on the top. You should be able to insert a knife into one and pull it out clean. 


And then ENJOY! :) yum yum yum... they taste absolutely amazing. Starbucks better watch their backs :P
